Ingredients
- Potato — 300g, sliced into oval rounds
- Cottage cheese — 150g low fat, blended smooth
- Bacon — 50g diced
- Garlic powder — garlic salt, to taste
- Pepper — to taste
- Cooking oil spray — light, optional for crispiness
- Spring onion — for topping, optional
Directions
- 1
Slice the potatoes into oval rounds — thicker or thinner depending on your preference — and toss them in a bowl with garlic salt and pepper until coated.
- 2
Arrange the slices on a baking tray lined with baking paper. Spray lightly with cooking oil if you want extra crispiness.
- 3
Bake at 200°C for 10–15 minutes.
- 4
Flip each slice over, push them together so they're close and overlapping like nachos, and bake for another 5–10 minutes.
- 5
Remove from the oven. Spoon the blended cottage cheese over the top and scatter over the diced bacon.
- 6
Bake one final time for 5–10 minutes until the bacon is crispy and the cottage cheese is slightly warmed through. Top with spring onion and enjoy!
