Ingredients

  • Potato — 300g, sliced into oval rounds
  • Cottage cheese — 150g low fat, blended smooth
  • Bacon — 50g diced
  • Garlic powder — garlic salt, to taste
  • Pepper — to taste
  • Cooking oil spray — light, optional for crispiness
  • Spring onion — for topping, optional

Directions

    Slice the potatoes into oval rounds — thicker or thinner depending on your preference — and toss them in a bowl with garlic salt and pepper until coated.

    Arrange the slices on a baking tray lined with baking paper. Spray lightly with cooking oil if you want extra crispiness.

    Bake at 200°C for 10–15 minutes.

    Flip each slice over, push them together so they're close and overlapping like nachos, and bake for another 5–10 minutes.

    Remove from the oven. Spoon the blended cottage cheese over the top and scatter over the diced bacon.

    Bake one final time for 5–10 minutes until the bacon is crispy and the cottage cheese is slightly warmed through. Top with spring onion and enjoy!
