Ingredients

  • Potato — 300g, thinly sliced (paper-thin on a mandoline if possible)
  • Garlic salt — to taste
  • Italian seasoning — to taste
  • Cheese seasoning — to taste, or grated parmesan
  • Water — enough to fill a bowl halfway, for soaking
  • Ice — 2 cups, for the soaking water

Directions

  1. 1

Trim the ends off the potatoes and slice them as thinly as you can — a mandoline makes this easy, but a sharp knife works too.

  2. 2

Fill a bowl halfway with water, add the 2 cups of ice, and soak the potato slices for 1–2 minutes to draw out the excess starch. Lift them out and pat them dry.

  3. 3

Lay the potato slices on a plate lined with baking paper and season one side with garlic salt, Italian seasoning, and cheese seasoning.

  4. 4

Microwave for 5–6 minutes. At the halfway point, take them out, flip each slice, season the other side, and continue microwaving. Every microwave is different — keep an eye on them and look for a golden, crispy colour. You may need a little extra time.

  5. 5

Serve on their own or with a low-calorie dipping sauce.
