Ingredients
- Potato — 300g, thinly sliced (paper-thin on a mandoline if possible)
- Garlic salt — to taste
- Italian seasoning — to taste
- Cheese seasoning — to taste, or grated parmesan
- Water — enough to fill a bowl halfway, for soaking
- Ice — 2 cups, for the soaking water

Trim the ends off the potatoes and slice them as thinly as you can — a mandoline makes this easy, but a sharp knife works too.

Fill a bowl halfway with water, add the 2 cups of ice, and soak the potato slices for 1–2 minutes to draw out the excess starch. Lift them out and pat them dry.

Lay the potato slices on a plate lined with baking paper and season one side with garlic salt, Italian seasoning, and cheese seasoning.

Microwave for 5–6 minutes. At the halfway point, take them out, flip each slice, season the other side, and continue microwaving. Every microwave is different — keep an eye on them and look for a golden, crispy colour. You may need a little extra time.
