Ingredients
- Taco shells — 3 stand-and-stuff hard taco shells
- Low-fat cheese — 45g, grated
- Peri peri mayonnaise — 30g
- All-purpose seasoning — 1g (or seasoning of choice)
- Spring onion — 15g, sliced
- Tomato — 30g, diced
- Beef mince — 100g, extra lean, raw
- Lettuce — 60g, iceberg, shredded

Season the beef mince with all-purpose seasoning and cook it in a non-stick pan over high heat for 7–10 minutes until cooked through. While it cooks, prep your vegetables.

To build each taco boat: start with 20g of shredded lettuce at the base, then add 25g of cooked mince, 10g of diced tomato, 15g of grated cheese, 5g of spring onion, and a drizzle of 10g peri-peri mayo.
