Ingredients

  • Taco shells — 3 stand-and-stuff hard taco shells
  • Low-fat cheese — 45g, grated
  • Peri peri mayonnaise — 30g
  • All-purpose seasoning — 1g (or seasoning of choice)
  • Spring onion — 15g, sliced
  • Tomato — 30g, diced
  • Beef mince — 100g, extra lean, raw
  • Lettuce — 60g, iceberg, shredded

Directions

    Season the beef mince with all-purpose seasoning and cook it in a non-stick pan over high heat for 7–10 minutes until cooked through. While it cooks, prep your vegetables.

    To build each taco boat: start with 20g of shredded lettuce at the base, then add 25g of cooked mince, 10g of diced tomato, 15g of grated cheese, 5g of spring onion, and a drizzle of 10g peri-peri mayo.

    Repeat for the remaining two taco boats with the leftover ingredients and serve straight away.
