Ingredients
- Bacon — 100g, short cut, diced
- Sausage — 4 extra lean beef sausages, sliced
- Onion — 1 white onion, diced
- Brown sugar sweetener — 1 tsp (optional, to caramelise onions faster)
- Egg — 8, whisked
- Salt — a pinch (to season eggs after cooking)
- Tortilla — 4 low-calorie wraps
- Low-fat cheese — 120g (30g per burrito)
- Spring onion — diced, for topping (optional)
- Sriracha hot sauce — to taste, for topping (optional)

Cook the diced bacon in a pan over high heat until crispy, then set aside.

In the same pan, cook the sliced sausages until browned and slightly crispy, then set aside too.

Add the diced onion to the pan and sprinkle over the brown sugar sweetener if using — it helps them caramelise faster and adds a touch of sweetness. Cook for 8–10 minutes, stirring occasionally, until nicely browned.

Remove the onion and reduce the heat to low–medium. Add the whisked eggs and gently stir every 30 seconds or so for about 5 minutes, keeping the heat low to get fluffy, soft curds. Season with salt once done.

Warm the tortillas in a pan for about 30 seconds on each side to make them more pliable.

Divide the bacon, sausage, onion and eggs evenly across all 4 tortillas.

Top each with 30g of cheese, a scatter of spring onion and a drizzle of sriracha if you like. Roll tightly into burritos and serve.
