Ingredients
- Beef mince — 130g, extra lean
- Onion powder — 1 tbsp (for meat) + 1/2 tbsp (for sauce)
- Garlic powder — to taste (for meat) + 1/2 tbsp (for sauce)
- Mustard — 10g (for meat) + 15g (for sauce)
- Worcestershire sauce — 2 tbsp
- Tortilla — 1 low-calorie wrap
- Pickle — sliced, to taste (optional); plus 1/2 tbsp pickle juice for sauce
- Low-fat cheese — 40g, grated
- Tomato sauce — 25g, reduced sugar (for sauce)
- White wine vinegar — 1/2 tbsp (for sauce)
- Greek yoghurt — 70g, low-fat (for sauce)
- Smoked paprika — 1/2 tbsp (for sauce)
- Cooking oil spray — for pan

Make the sauce first: mix together 25g of tomato sauce, 15g of mustard, 1/2 tsp of white wine vinegar, 1 tbsp of pickle juice, 1/2 tbsp each of onion powder, garlic powder and smoked paprika, and 70g of low-fat Greek yoghurt. Set aside.

Spray a pan with cooking oil and cook 130g of extra lean beef mince over high heat, breaking it apart as it cooks. Just before it's fully done, add the onion powder, garlic powder, 10g of mustard and 2 tbsp of Worcestershire sauce — this keeps the meat juicy.

Spread half the sauce evenly over the entire low-calorie wrap.

On one half of the wrap, pile on the cooked mince, sliced pickles and 40g of low-fat cheese.

Fold the empty half over and toast the quesadilla in the same pan over high heat for 1–2 minutes.
