Ingredients
- Cauliflower rice — 200g cooked
- White rice — 70g cooked mixed brown rice and grains
- Prawns — 200g
- Garlic — 5g, diced
- Red chilli — 1/2, chopped
- Garlic peri peri sauce — 80g
- Spring onion — 20g, sliced
- Paprika — 1 tsp
- Salt — a pinch
- Olive oil — 1/2 tsp, optional
- Parsley — parsley flakes, a pinch

Season the prawns with salt, paprika, and parsley flakes.

Heat 1/2 tsp of olive oil in a pan over medium heat and cook the prawns until pink and just cooked through. Set them aside on a plate.

Using the same pan, add the peri peri sauce and diced garlic. Let it simmer for 1–2 minutes, stirring gently.

Return the prawns to the pan and toss to coat in the sauce for another minute or two, then remove them again.

In the same pan, add the cooked cauliflower rice and grain rice. Stir for 1–2 minutes so the leftover sauce soaks into the rice.

Spoon the rice into a bowl, arrange the prawns on top, and scatter over the spring onion and chilli. Enjoy!
